Fun Facts: beef tallow has the highest melting point among common animal fats. Lard starts to melt at 28°C. beef tallow has a saturated fatty acid content as high as 50%-60%[3], and is as solid as a rock at room temperature and as stable as Mount Tai when boiling.

The answer is: most likely, he was a dockworker. Let's rewind to the late Ming and early Qing dynasties, to the Chaotianmen Wharf in Chongqing. The Yangtze and Jialing Rivers converged here, and ships came and went in great numbers.

 

In those days, Chongqing was a distribution center for livestock trade in the surrounding provinces. Cattle were transported to the docks for slaughter. The best meat was sold to the wealthy, while the remaining offal—tripe, throat, liver, and fat—became scraps that the butchers couldn't get rid of.

 

So someone bought these scraps at a low price, set up an iron pot, threw in a handful of chili peppers, a few peppercorns, a piece of beef tallow, and then sliced ​​the beef offal thinly and dipped it in—
